Saturday, January 18th - Broccoli-Wild Rice Casserole
Originally from the Pioneer Woman Cookbook, pg. 275
I had to change all the proportions because they were too much for my baking dish.
2 cups cooked wild rice (I used a boxed package)
1.5 cups chicken broth
1 large broccoli head
5 tbs. butter (3 for cooking, 2 for topping)
1 small onion
8 oz. cremini mushrooms
2 carrots
2 celery stalks
1/8 cup flour
1/4 cup heavy cream
2 teaspoons salt
1 teaspoon pepper
1 cup panko breadcrumbs
I only baked the casserole for 10 minutes with the lid on and 10 minutes without the lid.
We liked this, but the whole cooking time is about 90 min. so not sure if I will make it again really soon.
