Friday, April 8th, 2011 - Deviled Eggs

Deviled Eggs

1 dozen eggs
2 tsp. Dijon mustard
1/3 cup mayonnaise
salt and pepper
paprika

1. Put eggs in a single layer in a large pot of water and heat water up to boiling.  Let them boil for a few minutes.

2. Take them off the heat, cover and let stand for 12 minutes.

3. Put eggs into a bowl of cold water and put in the fridge for an hour.

4. Peel the eggs.  Slice each egg in half, lengthwise.  Remove yolks and place in a medium mixing bowl.

5. Using a fork, mash up the yolks, and add mustard, mayonnaise, salt, pepper, and paprika.  Spoon the egg yolk mixtures into each egg white half and set on a serving platter.  Sprinkle with a little more paprika.
